There are a lot of things that can go wrong when you make dairy-free ice cream at home.

If you’ve ever tried… then you know:

When you’re working with eggs, it takes a matter of seconds before your gorgeous custard turns into a scrambled mess…

If you under-churn your ice cream, it’ll never achieve the texture of the stuff in the carton…

Same goes if you over-churn it…

And if you don’t wrap it up in tupperware, two layers of plastic, AND foil on top… it’s going to get a thick layer of ice on top and will probably taste like your freezer.

(Which is certainly NOT my goal when I make ice cream.)

Well, there are a number of strategies out there – but a lot of them are incredibly complicated, and either:

• Include ingredients like sweetened condensed milk, which are HORRIBLE for you (and your waistline)... or

• Involve about 12 different steps, with results that only marginally resemble the real deal.

It's almost enough to make me abandon the project altogether... and send me to the store to buy that overpriced pint of dairy-free ice cream.

Even if I'm already in my sweatpants and ready to watch a movie!

But don't give up just yet...

Let me simplify things a bit for you.

This recipe is 8 ingredients MAX, and only requires two steps:

Blend, and freeze.

You don’t need an ice cream maker, it won’t turn into a rock in your freezer, and guess what?

It actually looks like ice cream!!

Revival Point’s 5-Minute Mango, Coconut & Cardamom Ice Cream (Dairy-Free, GF & Vegan)

Equipment Needed: Blender or food processor; spatula; freezer-safe tupperware

Recipe Time: 5 minutes, plus extra time to freeze if necessary

Makes: About 2 cups

Ingredients:

• 16 ounces of frozen mango, chopped into cubes

• 1-2 cans coconut milk, cream on the top separated from the bottom (see Recipe Notes)

• 3 Tbsp coconut sugar, combined with 3 Tbsp hot water (stir to dissolve)

• 1/4 tsp ground cardamom

• 1/4 tsp garam masala (see Recipe Notes)

• 1 tsp pure vanilla extract

• Pinch of kosher salt

• 1 Tbsp rum or tequila (optional – see Recipe Notes)

Directions:

1) Combine the ice cream ingredients… and blend!

In your blender, add everything on the list. Omit the optional ingredients if you want – you do you.

Pulse it a few times until it starts to come together, then blend until smooth.

Depending on what kind of blender or food processor you’re using, this may take a couple of minutes. And because the mixture will heat up the longer you blend it, you may need to freeze it for a little once it’s blended.

When it is fully blended, taste it and adjust as needed. 

This ice cream is not very sweet, so if you want to add more coconut sugar, you can. Just make sure to turn it into a syrup first for maximum consistency (mix equal parts sugar and warm water).

Scoop into bowls, top with your favorite fruits, nuts, or other crunchy treats (toasted flaked coconut would make an excellent topping here), and enjoy!

Recipe Notes

• Different brands of coconut milk will give you varying levels of cream. So as a rule of thumb, you’re looking for about 2 inches of cream to scoop off the top. If you don’t get enough, you may need more than one can.

• Garam masala is a typical Indian blend of spices – usually cumin, coriander, cinnamon, cardamom, clove, and a variety of other spices depending on who’s making it. While garam masala does have a savory flavor, it can also be used in sweet applications when used sparingly. It’s one of those ingredients you can add to recipes when you want that “What’s in this? It’s soooooo good!” reaction.

• Adding a single tablespoon of liquor to this ice cream will prevent it from freezing solid in the freezer and won’t add any real flavor to it. You can omit it if you want, but it will help with the texture.
